Come and learn to cook over wood fires using a variety of techniques from around the world. We have an enormous wood fired pizza oven, fire pit, dustbin ovens, Barbacoa pit, Hangi pit, spits, Dutch ovens, griddles and Welsh bake stones. We will be using a variety of locally sourced wild game, fish and other meat plus seasonal vegetables and fruits. Day courses will cover preparation of fish and game, methods of acquiring game, fish and meat in the wild, foraging for wild foods, tree and wood identification, building different fire lays and lighting fires using a variety of techniques. At the end of the day you will sit down to a fine meal that you prepared during the day, whilst sampling a variety of wild sourced beverages and cordials.
