The bar design offers soft leather alcove seating with mood lighting, why not take advantage of “Book a booth” which comes with a “Very Reserved” sign. Your own private booth is a great way to spend the weekend evenings with friends (which seats up to six). French lavender is grown, as is mint and lemon sage all of which are key ingredients for just a few of the Waterhouse signature cocktails, the mixologists are proud of their creations which include earl grey martini served in a glass tea pot and the Brighton rocks! served with Brighton stamped rock, to name just two.
The terrace is filled with parasols and seating, it is a great place to people watch which also offers unrivalled sea views. Drink champagne such as Pommery brut royal, Bollinger, and of course Louis Roederer Cristal, the extensive brandy, Cognacs and Armagnac’s including Hennessy Paradis.
