The Story of Uchu Perú...

The word "uchu" comes from Quechua - an ancient language of the Andes - and means chilli (or ají in Spanish).

Peruvian cuisine is not just about what you’re eating - it’s about bringing people together from all walks of life and uniting our society. From deep in the Amazon jungle right up to the highlands of the Andes and all of the towns, cities and villages in between, for hundreds of years, Peruvians have been sharing this passion for food. The Peruvian cuisine is one of diversity and fusion, combining the indigenous food of the Incas with those introduced from Asia and Europe.

Food has always been my passion. I grew up in a small town in the South of Perú, with a thriving fishing industry. One of my favourite memories is catching shellfish on the beach early in the morning, whilst waiting for the fishermen to get in, and making delicious, fresh Ceviche. After moving to Lima and training at Le Cordon Bleu, I worked in various restaurants, including the JW Marriott, where I learnt how to translate my passion into quality food that people could enjoy. A couple of years ago I decided to travel to Europe to discover new flavours and techniques; I worked in San Sebastián in Spain for a while, where I was able to get a taste of the delicious Basque cuisine. It was when I was visiting a friend in England that I fell in love - both with the country and with a beautiful girl. The rest, as they say, is history!

I am now living in Bristol, a thriving city that has a diverse and vibrant food scene. Whether it’s street food, fine dining, exotic dishes or a leisurely brunch you’re after, Bristol has it all. I am really proud of my heritage and excited to be able to bring the taste of Perú to this fantastic city so that the people of Bristol and beyond can share the passion for our food.
