The Steak & Burger Merchant

David & Robert Hopkins - We have seen our first restaurant The Merchants Yard go from strength to strength and when an opportunity arose to open a second restaurant we couldn't resist. This time we have gone back to basics. We both have large families and so wanted a restaurant that would be as appealing to families with children as to couples and business people. Everyone loves a burger and with greater awareness of animal welfare in the food chain we wanted to assure people that our burgers are from the best quality meat. There are many health benefits of eating 100% grass fed beef and beef cows grown slowly at a natural rate rather than fed supplements to speed up the process also gives the meat more flavour. So because we are using the best beef for our burgers we thought it would be rude not to offer our beef in its simplest form, steak, and our amazing chefs will cook them exactly how you would like.

We have followed this logic with all produce in The Steak and Burger Merchant using only free range meat and eggs, organic milk and other dairy products and sustainably sourced fish and seafood. We aim to keep waste to a minimum by having a basic menu but one that delivers on taste.

Carl Riley - I have teamed up with David and Robert Hopkins from The Merchant's Yard at Tideswell. They are Directors of the builders' and plumbers' merchants, M Markovitz Ltd.

I'm currently the Executive Chef of The Merchant's Yard and The Pizza Merchant in Tideswell and Creative Food Director of The Steak and Burger Merchant in Bakewell.

My role at Tideswell is to continue producing stunning classic dishes... Such as gammon & egg, fish & chips, steaks and such like... However in addition to that part of my role is to add some more defined dishes such as venison loin with king oyster mushroom, squash purée, junior paste & pomme dauphine... This is to add a little more dimension to what we already offer.

I'm keen to achieve food and drink accolades to show the quality dining experience we have to offer. The Steak and Burger Merchant is all about great local and ethically sourced ingredients cooked simply in a stunning newly refurbished restaurant. It will be a place for all ages, offering something for everyone.

This is a once in a life time opportunity for me to work alongside such excellent businessmen who share my passion for food and drink. When David and Robert approached me to work for them at The Merchant's Yard I couldn't say no... The plans they have for the restaurants are exciting and it's not very often you come across two people who will execute them to such high standards.
