The Coton Foundry Smokehouse

Whilst living in Canada in the mid nineties, Roger Sanderson discovered the art of traditional hot food smoking. Buying his first water smoker in 1998 and working in relative isolation, he set about gathering the skills needed to produce meats, fish and veg infused with the subtleties of woodsmoke produced by oak, apple, cherry, plum, alder and of course, maple.
Constructing his own smokehouse in 2011 and equipping it conform with Environmental Health and Food Hygiene regulations, Roger resurrected an old family business name and formed The Coton Foundry Smokehouse.
He can now offer commercially, hot smoked Beef, Pork, Ribs, Poultry, Fish, Garlic and other Vegetables as well as cold smoked Cheeses.
All food is smoked to order and requires 48 hours notice.
