Our grass fed animals are traditional breeds of Sussex cattle and a mixed flock of Jacob, Texel and Dorset Down sheep.
We hang our beef for three weeks to increase tenderness and enhance the flavour.
The meat of Jacobs sheep is highly sought after due to its tender, firm and 'melt in the mouth' textures.
The Dorset Down Sheep is known for its sweet and delicately flavoured meat.
The Texel breed is famous for its lean, tender and succulent meat.
