Casella & Polegato is all about excellent bread and baking. We value both tradition and innovation - some our recipes are little changes from the time of our great grandparents and the resulting breads will remind you of tastes that have almost disappeared.
We also like blending the best of the old and new, to make breads that combine traditional qualities with exciting flavour combinations.
All our bread is made using our own mother dough and long fermentation to achieve deeper and more complex flavours and greater lasting qualities.
